Due to posts from melstra and velvetpage, I am attempting a fruited apple butter. It was going to be cranberry-apple, but my store didn't have any cranberries in stock. Teh Horrorz. So, I got 2 small bags of sweet black cherries. We'll give it a go, and see what happens.

I'm going with what melstra posted, using a boatload of apples (about equal amounts of Fuji and whatever it was that was $0.59/pound). and 2 small bags of frozen cherries. In a few minutes, I'm going to wash the apples and run them through a corer/slicer, toss them in the slow cooker, and mix in the cherries, once they're halved, and a cup of water.

I have plenty of cinnamon, cloves and nutmeg, and I'll probably also throw in a dash of salt, as well as sugar. I'll make those decisions tomorrow morning, after I evaluate the state of the goo.

The ultimate plan is to can the finished butter, to give as gifts this Christmas. I ordered a canning set, and I'll pick up a stock pot tomorrow, because I want to make sure it fits the rack. I'll also pick up jars with lids - I forgot them at the store today, when I got the apples. Oops.

I considered putting in some sour cherries that were taking up room in my freezer, having mistaken them for cranberries before I took a closer look at the label. I didn't, so you'll have to let me know how it turns out.

I peeled my apples, mostly because I'm not brave enough to trust a blender quite that far. :)

I'm giving away most of my apple butter, too - probably to people I don't want to buy for but still want to remember, like my principal and the EA I work most closely with.

I made a second batch this weekend as plain apple (Jeff asked me to, though why I listened I don't know, seeing as we're probably not keeping any for ourselves...) I only peeled about 4 of the 18 apples and didn't have any trouble with my stick blender. There were maybe 2-3 small fibrous "clumps" I fished off the end of the blender after I pulled it out, but that's it.

Hope it works well for everyone! I've been pleased so far!
